Hyssop has been prized for both flavor and medicine and was used even in the Bible for cleaning rituals. Hyssop has a light-natured and delicate flavor that is inimitable. St. Hildegard recommends to use hyssop as often as possible. According to her scriptures hyssop supports healthy lungs and the respiratory system.
Hyssop blends well in tomato sauces, soups or stews, or foccacia bread. Light-flavoured poultry should always get a touch of hyssop. Can be used also for egg dishes and for sweet-tarts. Since the flavor is very light, hyssop won't overwhelm any dish.
